Gordon Ramsay And YouTubers Create The World's Largest Beef Wellington

What does it take to break a world record?

For Nick DiGiovanni, a rising star in the YouTube culinary world, all he needs is a bunch of people as his team, a fair amount of ingredients, and world-renown chef on his side.

The YouTuber teamed up with Gordon Ramsay to set a Guinness World Record for the largest Beef Wellington, by scaling up a version of Ramsay’s signature dish.

To craft a record-breaking dish, the duo used meat glue to bind multiple pieces of beef together before cooking it sous vide to ensure a perfect medium-rare temperature.

Once completed, the Beef Wellington was presented to Guinness World Records adjudicator Andrew Glass, who officially certified the dish as the largest Beef Wellington in the world. The dish exceeded the required minimum weight, securing its place in the record books.

According to Guinness World Records' web page about the record, the Beef Wellington is 25.76 kg (56.79 lb).

In another post on its website, Guinness World Records explained that a typical Beef Wellington weighs around 1.42 kg (3.13 lb), whereas "this record-breaking one weighs about as much as an eight-year-old boy."

If its weigh alone is not impressive enough, the dish also measures a staggering 2 foot 5 inches long by 13 inches wide and 8 inches tall.

This massive dish was prepared in Boston, Massachusetts, and took a team of 20 people a full 10 hours to complete.

And among those in the team, include fellow YouTube creators, like Max the Meat Guy, known for his expertise in large-scale meat preparation, Guga Foods, another popular YouTuber famous for his meat-related content, and The Golden Balance, whose cooking skills helped ensure each component of dish was flawless.

As for Ramsay, whose name is synonymous with the Beef Wellington, it was his personal recipe that was used to craft this record-breaking masterpiece, making it a fitting tribute to his culinary legacy.

"First of all, we’ve got to get that sear - no color, no flavor," said Ramsay, as he gave DiGiovanni some key tips.

The chef emphasized the importance of every step, from the duxelles (a finely chopped mushroom mixture) and prosciutto to the crêpes, all wrapped in golden puff pastry, before being baked in a walk-in oven to achieve its final form.

Beef Wellington is a renowned dish that showcases a tender beef fillet wrapped in a mushroom duxelles, sometimes with a layer of prosciutto, and encased in a golden, flaky puff pastry.

It’s celebrated for its delicate harmony of flavors-the earthy mushrooms and crisp pastry contrast with the juicy, tender beef inside. The dish is frequently paired with sides like roasted vegetables, mashed potatoes, or a rich sauce like a red wine reduction.

While the origins of the dish remains uncertain, it is widely regarded as part of British cuisine, though its ingredients and cooking technique bear similarities to French cooking traditions.

The process of making Beef Wellington starts by seasoning and searing the beef fillet in a hot pan to develop a flavorful, caramelized crust while sealing in its juices. After cooling, a mixture of finely chopped mushrooms, garlic, and herbs is sautéed until dry, creating a rich, savory duxelles that is spread over the beef.

To keep the pastry crisp during baking, the beef is sometimes wrapped in prosciutto or crêpes to absorb moisture. The beef, covered with the mushroom mixture, is then carefully wrapped in puff pastry.

The pastry-wrapped beef is brushed with an egg wash for a golden, glossy finish and baked until the pastry is beautifully crisp, and the beef inside reaches the desired level of doneness, usually medium-rare.

Cooking Beef Wellington can be challenging due to the need to balance cooking the beef properly while ensuring the pastry remains crisp. The dish's luxurious flavors and intricate preparation make it a perfect choice for special occasions like Christmas, New Year's Eve, and anniversary celebrations, where its elegant presentation serves as a stunning centerpiece.

Beef Wellington's blend of French technique and British tradition makes it a unique and beloved dish for formal dining.

After the success was confirmed, Ramsay celebrated by lifting Glass onto his shoulders, and the rest popped a champagne bottle and a confetti.

The creation of the world's largest beef Wellington is not only a testament to the skill and creativity of these chefs but also an example of the power of collaboration.

With Ramsay’s guidance and a dedicated team of YouTubers and chefs, no culinary challenge is too great.
